By the White Bridge on Phet Kasem Road in Photharam, we simmer beef and offal in a clear broth with galangal, lemongrass and lime leaves, then sharpen it with chilli, holy basil and fresh lime.
Ban Sing in Photharam is a Lao Wiang community long known for its boiled beef soup, cooked at home and sold along the road. Our shop by the White Bridge on Phet Kasem Road is one of the places locals name when they talk about the old shops.
The soup starts clear: beef and offal simmered with galangal, lemongrass and lime leaves, finished with young galangal, crushed bird's-eye chilli, small-leaf holy basil and fresh lime.
Order the spicy tom saep if you like heat, or the mild beef broth with rice for children. Lime comes on the side, and you can choose your chilli level.

We are at the White Bridge on the southbound side of Phet Kasem Road, around km 83, in Ban Khong, Photharam; look for the roadside name signs.
Park along the road out front. There is plenty of seating and food comes out fast even when it is busy.
Our soup pots start simmering early every morning, all week; we sometimes close for festivals such as the Chinese Ghost Festival, so check Facebook or call 086 763 3080 before you set out.
How is Ban Sing beef soup different from beef noodle soup? It is a clear, herb-scented broth soured with lime and heated with chilli and holy basil, lighter than a dark stewed-beef broth; eat it with rice.
